Lupulin Threshold Shift

I say brew them all :)

My vote would go Belgian, IPA and then the Doppelbock in that order!

how to do the step mash?

how do you do the step mash w/ out a HERM/RIMS or using an electric tun? Granted, I just got my pump (not wired or set up yet) so I know I can transfer and reheat at some point, but when I try to figure out the temps to use to raise the tun temp, I get "error, temperature above boiling, add more water!".
Would I drain the tun, like a batch sparge, reheat to the next step temp, then transfer back to the mash? or do it in a recycle fashion?
Shitte, why do I feel like a HERMS may be in the future. Damn... more toys, the wife's gunna love it :?

I am hopeful that we are going to have a lot of people brewing out there, so I see no reason why we can't brew them all! Though I would say that everybody just brew whichever one (or two, or three) appeals to them.
