Duss-Alt Yeast - Blonde Ale

This batch of Blonde with 036 isn't doing very good but I haven't figured out why yet. It was brewed 3/29 and the beer only has ADF of 60 percent. There were not any mistakes in the process as far as I can see and it should be dry. Repitched 120 ml of slurry from a fresh carboy. Had a heat wrap on the carboy with a controller at 60 degrees F for the full period so the temp was constant all the way through the works.

If it doesn't straighten out, I am going to grow up a batch of WLP001 Cal Ale in a quart and throw it at high foam and see how it does.

11 lbs 8.0 oz Pale Malt (2 Row) US (2.0 SRM) Grain 95.83 %
8.0 oz Munich Malt - 10L (10.0 SRM) Grain 4.17 %
1.00 oz Williamette [6.00 %] (60 min) Hops 22.4 IBU
1 Pkgs Dusseldorf Alt Yeast (White Labs #WLP036) Yeast-Ale
Mash 149 degrees for 75 minutes.

151 SG starting gravity.

My Kolsch yeast in the next day works did just fine and is in the corny with gas now.

Not a happy camper since I have not figured out why the ADF is low.

All in the exercise of building a beer :lol:

Never did figure out why the 036 stalled, maybe underpitched even though I thought I had enough slurry.

I measured the SG a couple of day later but even though it was still fermenting the final SG hadn't changed. :shock:

Since I had some Wyeast 2565 (Kolsch) coming out of a previous batch, I decided to use it instead of WLP001 Cal Ale.

What I did was take the 2565 from the carboy, decant the beer, made a quart 1.040 SG wort and mixed it with the decanted yeast. Let the yeast and starter get active and at high foam, swirled it up and pitched a quart of starter into the stuck ferment.

The stuck ferment took right off with the new starter and appears happy to find something to eat :downtown: Know I have a blended yeast

What is neat about 2565 is that it reminds me of WLP001 Cal Ale or Chico. It just has a little more flavor but has the high rocky head of foam.

Taking a couple cases of mixed bottled beer for my wine bud to enjoy for the weekend.

Update.

After pitching an active starter of 2565 into the stuck fermentation the beer is finished. It now has an ADF of 75 percent.
