Which yeast???

Have Friday Everyone!!

I would like to make a Dandelion Wine recipe from one of my favorite books by Ray Bradbury, but Devin and I were unsure which yeast would be best.

Dandelion Wine

1qt dandelion flowers
4 qts water
1/2 C lukewarm water
1 yeast cake
1 lb seeded raisins
3 lbs or 6C sugar
1 lemon
1 orange
1 C rum

I've never had it but what I can understand is that it should be a cough syrup consistency.

Lalvin 71B or D47 would both work well.

I would imagine a yeast that won't take it to dry... from the description. I'd expect that John's recommendation would be spot on.
